ONCE IN MY WILD!

So, every once in a good while, My Baby specifically requests My Lasagna and umma tell you that I sometimes will say a definitive, “No!” For just so many reasons—too heavy, too fattening, too time consuming, too expensive—to just make the dang dish! JUST ALL TOO MUCH!

Though, this time, My Baby surprised us and came home for the holiday! So, well, I sprung for it—My Gift to our bellies and being!

HospiTalent Mariby Corpening’s ROASTED VEGETABLES LASAGNA and I even got a little wild with it, when I spiced it up—a special treat for us of ground lamb sautéed in onions and lots of garlic and fresh basil, slow-simmered scratch tomato sauce, fresh-roasted vegetables—cherry tomatoes, sweet onions, bell peppers, zucchini, pickled cabbage, sun-dried tomatoes, extra layers, extra cheeses—cheddar, jack & fresh mozzarella, deeper and even wider baking pan, thinking, oh, we’ll savor and feast all week long! TOMATO PIE! OOOOOH, MY!

HAD YOU EVER HEARD OF THIS?

Before about a year or so ago, I had never heard of TOMATO PIE! Sounds to me somebody was pretty hungry and with limited, well, options--like me, yesterday! I mean, who thinks of a pie of only tomatoes, right!

So, Grannie and I are making our rounds on a sunny, brisk Fall Saturday Morning at Eastern Market--fresh air, fresh foods, fresh breads, fresh faces, lots of people, colorful vendors, street music, and so, I see a line at the baker's table and wonder, "Well, what's that all about?" Curious, I ask the Baker Woman, "What's this?" To which she replies, "Tomato Pie!" Then the couple standing next to me chimes in, "Every time we come here, we pick up a couple of these pies! They are delicious!" The Baker Woman chimes in, "And they sell out every time!" "Oh, yeah," I think to myself, because, well, heck, there's only two left--me and, well, I'll be fair, the couple next to me! Oh, I'd better grab it!

LOVE, LOVE, LOVED IT! And from that day on, I knew I would have to make it for me and Grannie some day, only Mariby style, with slow-roasted tomatoes and vegetables (sweet onions, bell peppers, egg plant, zucchini, carrots, kimchi, etc.), fresh herbs (basil, oregano) to deepen the flavors.

To me, essentially, it's like a really good deep dish pizza with pie crust, instead of pizza dough and no meat OR perhaps even a Ratatouille in in a pie! And of course, I always take all steps further by adding a top crust! YUUUUUUUUUUM!

YEAST BREAD HOT FROM THE OVEN! Good Lord! Just call me #FatHappy

When, I was a kid, My Momma almost always served dinner with Brown-N-Serve Dinner Rolls (remember those) and a glass of ice cold milk. Never forget the feeling of bread hot from the oven with a drizzle’n of butter; never imagined I would be making them from scratch for myself! At the second rise, I knew I was in trouble! Too good!

Though, I truly miss serving you all, during COVID, an unbelievable time in our history, I have had time to hone my culinary skills. Today’s passion, PARKER HOUSE DINNER ROLLS baked in a cast iron skillet.

Can’t wait to serve you...again!
