Chicken Pop Pie

It is cold outside!  A time when we all crave to come home to a hot, uh, uh,  meal - something warm, hearty, comforting, ready and waiting!  [Okay, I'll stop!]  For me, it's Chicken Pop Pie, made from scratch, aka my way.  Yes, I call it "pop," because that's what I do to it!  Oh, with my scratch-made pie crust, bottom crust of stuffing [yup, you heard me], roasted chicken & vegetables laddled in Grannie's Bone Broth and my home-made cranberry sauce on the side, OMG! You hear me, it POPS!

Honestly, though I've never had a chicken pot pie I didn't like, I tell you, there's nothing compared to making your own at home.  The aromas that fill the house!  On a frigid cold day, like it was yesterday, you can feel the warmth of Chicken Pop Pie rushing to greet you at your front door!   Ooooooom!

Though, Chicken Pop Pie is essentially thickened chicken soup, spooned into a pie shell and covered with a top crust, for me, oh, I must have a top AND bottom crust, some stuffing [Whaaat!  I hear you] Yup, stuffing is my bottom crust; but, what gives it that pop, I make my own cranberry sauce - from fresh cranberries!  My family just goes, Ooooooom!  And I tell you, I can never make enough!
